Happy February, Lovers!
I don’t know about you, but I can never seem to be on time for anything. No matter how hard I try, I always seem to fall short. Every morning, without fail, I wake up with the best of intentions. I look at the clock.
“7:15am. We don’t have to be there until 9:15am and it only takes 15 minutes to get there. Perfect,” I say with such confidence.
The next thing you know, it’s 9:05am and I’m yelling and screaming in house, running around in a frenzy trying to get out the door.
“As long as we’re not more than 15 minutes late, we’re fine,” I say to myself. WRONG
Making this monthly meal plan is one of the ways I’ve tried to save some time and get me that much closer to punctuality. It seems to work…sort of.
I think most of us underestimate how time-consuming decision making can be. Staring at your closet trying to decide what to wear: 15 minutes. That blank stare in the fridge: 15 minutes. That’s 30 minutes I can never get back that could have been spent on something much more productive…like arriving on time!
Here is my meal plan for February. I am trying to switch things up for breakfast and lunch. The twins have ever-evolving palates, so what is a fan favorite one month could likely be banned the next. And vice versa. February may be a short month, but that doesn’t mean a lighter food load. Between Super Bowl and Valentine’s Day I have my work cut out for me.
There are quite a few make-ahead and slow cooker meals this month that are sure to help you save some time. And don’t be afraid to make more than you need and freeze the leftovers. Last week, my family ate last month’s pot roast and some ham from Christmas. They loved it and were none the wiser…until now. Enjoy!
