If you’re looking for a meal that you can put together in 15 minutes or less, look no further. Buckle your seat belts, ladies and gentlemen. This recipe is so fast that if you blink, you might miss it. This dish is great for those “I got stuck at work later than expected so now I’m racing home to make something that’s quick and good” days.

Start by bringing a pot of water, with a dash of salt, to a boil.

Chop some zucchini and yellow squash into bite sized pieces. You can save yourself even more time by doing this step ahead of time (Like on Sunday Prepday…hint hint)

2014-04-06 13.40.01Add olive oil to a hot pan. Toss in the zucchini and yellow squash. Saute the veggies for about 5-6 minutes, then add garlic. By now, the water is boiling and you’re ready to cook the pasta. I use angel hair or thin spaghetti.

ZucchiniCook the zucchini for another minute, then add the shrimp, salt, black pepper and red pepper flakes.

Shrimp in skilletContinue cooking the mixture until the shrimp is pink and opaque, about 5 minutes. Once the shrimp is fully cooked, add diced tomatoes and basil. For this dish, I prefer canned diced tomatoes. Don’t forget to drain them first! Stir the shrimp and veggies together until they are evenly combined and the tomatoes are warm.

Your pasta is ready now! Drain it and sprinkle it with a bit of olive oil.

Serve the shrimp and veggies over the pasta and enjoy!

Ingredients
  1. 1 green zucchini
  2. 1 yellow squash
  3. 1 lb large shrimp
  4. 1 tbs garlic
  5. 2 tsp salt
  6. 1 tsp black pepper
  7. 1 tsp basil
  8. 1/2 tsp crushed red pepper
  9. olive oil

  8. Once the shrimp is fully cooked, add diced tomatoes and basil. Don’t forget to drain the tomatoes first!
  9. Stir shrimp and veggies together until they are evenly combined and the tomatoes are warm.
  10. Drain pasta and sprinkle it with a bit of olive oil.
